Broccoli and Stilton Soup a British Classic!

Broccoli and stilton soup is an old-school British classic and the bold flavour of blue cheese & sage sing through in this easy winter warmer.

Cooking this delicious soup is done in a shade under 30 minutes and it will store in the fridge for 2-3 days!

Broccoli Soup with Blue Cheese

Whilst most of my food concentrates on dinner recipes for two I have a rich selection of soup recipes here too.

I love a good bowl of soup, it is so often lunch for me pretty much all year round!

This classic British broccoli and stilton soup joins other winter and autumn favourites like curried parsnip soup, cream of celeriac soup, oxtail soup, creamy cauliflower soup, spicy carrot and lentil soup and creamy Jerusalem artichoke soup.

It is a gloriously creamy soup despite not using either cream or potatoes.

Flavour wise it is big and bold, it uses a cheese and herb combination that I adore and it is classic.

Stilton and sage appear in both my blue cheese gnocchi and blue cheese pasta recipes and it is glorious.

Aside from that, you have some garlic, butter, onion and celery and it’s so simple.

Bring it all together, give it a blitz and job done in under 30 minutes!

Frequently Asked Questions

Can I use a different blue cheese?

Yes, of course, although it will then become broccoli and *insert other blue cheese here* soup, teehee!

I spent years living in central Europe where Stilton was difficult to find and expensive.

I’ve made this with everything from Gorgonzola to Danish Blue and Bleuchâtel and Roquefort, but Stilton is best in my opinion!

How long will this save in the fridge?

It will be ok in the fridge for 2-3 days if stored properly.

Reheat over a gentle heat and do not boil in order to prevent the cheese from burning on the base of the pan.

Will this freeze?

Technically yes, it will freeze and be ok to eat for 3 months. However, I do not personally like freezing this soup because it goes a little grainy.

Can I throw in the broccoli stalks?

Yes, by all means do that, it tastes just as good, but the colour becomes very much muted.

Can I use dried sage?

Yes definitely, add 1-2 teaspoons depending on your sage, start small, taste and add more as required.

Serving Suggestions

Broccoli and stilton soup begs for nothing other than a swirl of cream and some nice crust bread.

I’m not much of a bread maker, but if I were to bake bread for this I would make a soda bread… mainly because it is so easy!

Sprinkling on a bit more crumbled stilton cheese and maybe some chives is also a nice idea.

One final option would be to add some crispy croutons, I usually just toast some off in my air fryer!

  • Stovetop.
  • 20cm or 8″ saucepan with a lid.
  • Weighting scales and or measuring cups and spoons.
  • Chopping board.
  • Kitchen knife.
  • Blender.

Broccoli and Stilton Soup Recipe

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Rich, indulgent and creamy are the defining factors of this easy broccoli and stilton soup... oh yeah and quick too, it cooks in just 30 minutes!

Ingredients

  • 500g (4-5 Cups) Broccoli Florets
  • 100g Onion (2/3 Cup)
  • 1 Stick Celery
  • 35g (2 Tbsp) Butter
  • 2 Cloves Garlic
  • Medium Bunch (10g) Fresh Sage
  • 750ml (3 Cups) Vegetable Stock
  • 100g (1 Cup) Stilton Cheese

Instructions

  1. Cut the broccoli into a 2-3cm (¾"-1¼") florets.
  2. Cut the onion in half, peel it and then cut it into a 5mm (¼") dice.
  3. Cut the celery into a 5mm (¼") dice.
  4. Peel the garlic and slice it as finely as you can.
  5. Melt the butter in a medium-low (20cm or 8") saucepan over a medium heat.
  6. Add the onion, and celery and sweat gently for 7-10 minutes without colouring.
  7. Throw in the garlic and fresh sage and stir for 60 seconds.
  8. Pour in the vegetable stock and bring it to a boil.
  9. Add the broccoli and reduce to a simmer, put on a lid and cook until soft. This will take around 12-15 minutes.
  10. Pour the soup into a blender and blitz until silky smooth.
  11. Return to a low heat and stir in the stilton cheese, be careful not to boil because it burns quickly! Cook until the cheese has completely melted.
  12. Serve hot with a little drizzle of cream.

This was a great soup but I couldn’t find Stilton either so used one called Kapati bold blue, strong and crumbly with a distinctive bite, it won a gold award here in NZ

Awesome, I love this recipe and gave it a recent facelift and fell in love with it all over again. I missed Stilton so much when I lived in Central Europe, now I can't get enough of it lol!

I'm all for a bit of stilton myself but I do think you've guided people needing to use a substitution very well here Brian. Loving this soup - so utterly indulgent.

Stilton is one of those cheeses that can prove difficult for people to get their hands on... I'm always up for a bit of flexibility in recipes, the are guides and starting points and never the be all and end all :)

Not only is this wonderfully warming and perfect for fall, it is gloriously colored! So loving that gorgeous green coloring! I've only had broccoli soup with chunks of broccoli in it - I so need to give this a try - soon as I'm moved and unpacked! :)

I don't think I have yet recovered from my last move, in all fairness it was international (and 10 years ago) ;) Broccoli purees so well and keeps it's colour if looked after too.
