Cookie Ice Cream Sandwich

An Ice cream sandwich is all sorts of right and a glorious example of taking two magical things and making them even better! How is that possible?

This recipe is the perfect bit of summer fun. Whether you are a wee kid, big kid or even a grumpy old git like me these things never fail to raise a smile.

A fantastic squidgy chewy chocolate chip cookie sandwiched around a wedge of your favourite ice cream.

Regular readers will know that my rare dessert recipes are usually grounded in nostalgia. 

Growing up in the UK, ice cream sandwiches used wafers as the ‘bread’. I much prefer this idea of using a cookie.

Whilst I am on the subject of the idea of this recipe, I must shout out to my mate Meaghan. She is the voice behind cook craft love and this idea comes from perusing her site.

Simple Cookie Recipe.

I chose a really simple cookie recipe to work as the ‘bread’ for this ice cream sandwich.

And yes I went with a chocolate chip cookie… Some people have a thing about room temperature chocolate.

I am not one of those people, my chocolate must be chilled and here frozen.

The texture of that crunch which then melts to that luxurious silky chocolate is perfect if you ask me.

Particularly against the ice cream, which must be vanilla if I am in charge. 

I love ice cream despite not having a sweet tooth, but my choice will always be vanilla.

Particularly if it is topping a hot dessert like my sticky toffee pudding!

Is Homemade Ice Cream Worth It?

As a passionate cook who insists on making stuff like homemade tomato ketchup and sweet chili sauce at home I say no!

That may come as a bit of a shocker.

I have had all of the toys and gadgets and never once made an ice cream that can compete with a really good quality store bought ice cream.

And personally speaking, I would avoid “no churn” ice cream like the plague.

That is not to say that it isn’t a fun project that is a giggle. 

But ice cream for me must have the perfect luxurious, silky texture.

A texture that an Ice Cream Maker that cost several hundred pounds and the very best ingredients could not come close to.

So if you are asking me, I say buy your ice cream!

Cookie Ice Cream Sandwich

Yield: 6 Servings
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

These ice cream sandwiches made with a simple homemade cookie are a great fun summer treat and are great for all ages!


For the Cookies:

  • 175 g Plain Flour
  • 1/2 tsp Bicarbonate of Soda
  • 75 g Brown Sugar
  • 75 g White Sugar
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla Extract
  • 150 g Butter
  • 1 Egg
  • 100 g Chocolate Chip Cookies
  • 75 g Hazelnuts, Roughly smashed up

For the Ice Cream Cookie Sandwiches:

  • 2 Cookies, This is per portion
  • Vanilla Ice Cream


For the Cookies:

  1. Combine all of the wet ingredients in a bowl.
  2. Combine all of the dry ingredients (with the exception of the nuts and chocolate chips).
  3. Stir the flour mixture in the wet ingredients and stir until just combined.
  4. Now stir in the nuts and chocolate chips and allow to stand for an hour or so.
  5. Preheat your oven to 190°C.
  6. Take 1 tablespoon of the cookie batter (around 35g) and place in the hot oven on baking parchment at 10cm apart and bake for 14-16 minutes.
  7. Remove from the oven and allow to cool on a cooling tray.

For the Ice Cream Cookie Sandwiches:

  1. Remove your ice cream from the freezer for 20 minutes to soften a little.
  2. To make your sandwiches take 2 of the cookies that match up well for size.
  3. Get a circular cookie cutter the same size or slightly smaller that the cookies and add a generous amount of softened vanilla ice cream.
  4. Return to the freezer to firm up for 20 minutes.
  5. Then remove from the mould by running a sharp knife around the edge before sandwiching between the two cookies.

  1. If you have one ice cream sandwich that melts quickly it’s because of the stabilizing and emulsifying ingredients. More sugar, more cream, and less fat in the ice cream make for a longer-lasting sandwich.

  2. Cookies are perfect when crunchy on the outside, chewy in the middle. These sound fab. Ice cream is a funny business, it can be so easy to make (the no-churn variety is ideal), but can also be time consuming. Love the idea of these ice cream sandwiches, a perfect treat for a warmer day.

  3. I love ice cream cookie sandwiches but am yet to find a way of eating them without dripping ice cream all down myself haha! Any tips welcome. Lovely idea to make them at home. Kids would love this!

  4. I don’t know why I’ve never made ice cream cookie sandwiches but I really need to do so! Perfect way to enjoy ice cream on a hot day!
