A rare sweet treat for me today and this delicious ice cream cookie sandwich is inspired by my friend Meaghan over at Cook Craft Love. I saw a picture of them over on her site and thought, “that would go down a real treat”.
You see large swathes of Europe have been melting in a bit of a heat wave in recent weeks and our house seems to be right in the middle of those ‘vast swathes’ with daily temperatures averaging 7-10°C above average temperatures for this time of year, that makes cold treats much needed. It does however make taking pictures of said cold treats a real challenge.
Regular readers will know that myself and baking have a complicated relationship but I am not above challenging myself so made these cookies from scratch and they are great almost malty which matches up against the sweet vanilla ice cream a treat.
I did however avoid making my own ice cream, there are just some things that I think are better bought, I used to have an ice cream maker (a really good one) and my belligerent belief that homemade is always better was broken by ice cream.
I mean I make my own ketchup and sweet chili sauce and all sorts of other stuff but genuinely could not make decent ice cream that was a scratch on good quality shop bought ice cream. You could of course by the cookies too but then this recipe would definitely have no place here on Krumpli!

The cookies for this Ice Cream Cookie Sandwich came from a book I have knocking around called Chewy, Gooey, Crispy, Crunchy by Alice Meldrich. Another of those gifts I got because I like cooking, despite the fact I don’t really have a sweet tooth! The recipe works a real treat and the crunchy on the outside paired with the chewy on the inside is a real treat.
