Cooking for two requires a different mindset than cooking for larger numbers. Roasting whole joints of meat or cooking up big side dishes to share are 'off the menu'. As a result of this often much more planning is required, that is not a bad thing, I do it all for you.
Don't worry, if you are cooking for more going in the other direction and scaling up recipes is much easier!
My recipes are all designed with cooking for two in mind. Even those with larger serving sizes will be great for either freezing or repurposing as leftovers.
I think a good homemade pasta recipe is something that is often overlooked and is a real joy, naturally I don’t advocate making it every time you eat pasta but when you want to make a homemade ravioli or just have no pasta in the cupboard the chances that you have the ingredients for making pasta at home is pretty much guaranteed.
My spicy bean burger combines beans, lentils, onions, spices with pickled chilies and is topped with some young kale and a sweet but spicy chunky peach chutney, sure it takes a little longer to make than a beef burger but I always think the best things in life are worth a little more effort.
What could be more summery than a yogurt panna cotta enriched with the glorious floral flavours of elderflower and strawberry, in my head probably not a lot, the two flavours of summer for me are Elderflower and Strawberry and they work so very well together…
Hungarian Chicken Paprikash with homemade Nokedli and once again I am running the risk of offending my adopted nation with my take on a Hungarian classic, however my Gulyás Recipe was well received and I have yet to receive any death threats…
It is hard to avoid Indian food if you grow up in the UK and the flavours of Indian cuisine are as familiar to me as roast beef and I have worked long and hard at bringing the flavours I love so much to our Hungarian table, so much so that every 8 weeks or so we make a 320km round trip to Budapest to ensure our spice cupboard is wanting of nothing.
I have been making sausages pretty much ever since we moved to Hungary, as I mentioned in my Pork Pie recipe there are just some flavours from home that an expat can’t live without and the good old British Banger holds the top spot in that fairly short but nevertheless important list.
I can’t believe I have made it to a month into my food blogging and not posted a single cauliflower recipe… I have to admit to being a bit of a cauliflower fiend and this sweet spicy roasted cauliflower is among my favourites,
Who doesn’t like a little messy ‘finger’ food every now and then and given that the current period of time is very busy with planting and looking after our fledgling crops then there was only one place to go… Beautiful fall off the bone Oven Roaster BBQ Ribs with some sexy roasted onion BBQ dipping sauce.
