These sweet and spicy sriracha sauce and honey-glazed chicken wings are gloriously simple to make, and I give instructions for cooking them in an air fryer, on the BBQ, or to have them oven-baked.
Prepare your drumsticks by cutting them into drumettes and winglets. You do not need the tips, but freeze them up and use them to make stock.
Sprinkle all of the dry ingredients over the chicken wings, toss to coat and leave them to marinate. The longer the better, I try to let them sit for 24 hours.
How to Cook in an Air Fryer
Place the marinated chicken wings in the basket of an air fryer and cook at 130ºC or 250ºF for 20 minutes. Give them a shake after 10 minutes.
Just before the wings have had 20 minutes, whisk together the honey and sriracha sauce in a large mixing bowl.
Transfer the wings to the glaze, stir and toss to give them a nice coating, then return them to the air fryer and cook at 200ºC or 390ºF for 8-10 minutes, shaking halfway through the cooking time.
How to Oven Bake
Place the chicken wings on a baking rack over a baking tray (lining the tray with foil helps with cleaning later), and bake at 130ºC or 250ºF for 30 minutes.
Remove the wings and flip them over on the backing rack, turn the oven up to 200°C or 400°F and cook for a further 20 minutes.
Just before the wings are ready, whisk together the sriracha and honey in a large mixing bowl.
Remove the wings and add them to the glaze, toss them to coat in the sauce, then return to the baking rack and drop them in the oven for a final 10 minutes.
How to Cook on a Grill or BBQ
Set up your BBQ with direct and indirect heat sections. You want to preheat the BBQ to around 250ºC or 485ºF.
Place the wings over the indirect heat section, close the lid and cook for 25-30 minutes. You want the internal temperature of the wings to reach 65-70°C or 150-160°F.
Just before the wings are ready, whisk together the sriracha and honey in a large mixing bowl
Remove the wings, add them to the bowl with the glaze and toss them to coat in the sauce.
Return the wings to the direct heat section of the heat and cook to get a nice glaze. This will take 1-2 minutes on each side. Be sure to check that the chicken has reached 73°C or 165°F before serving.

The timing for this recipe relates to cooking them in an Air Fryer, cooking them in the oven takes around double the time and they are a little quicker on a BBQ.
