Add all of the ingredients for the glaze to the base of a flat bowl large enough to hold the sliced halloumi cheese, then mix it well to combine. You can do this up to 24 hours in advance; it will not add a great deal of flavour because halloumi is a "dense" cheese, but it does free up time.
Slice the halloumi as desired, you can do 4-6 slices, cubes or even strips depending on what or how you want to serve the cheese. Then flip it in the glaze and let it sit for 5 minutes or so.
5 minutes before you are ready to cook, preheat your air fryer to 200°C or 390°F. Brush the grate of the air fryer with a little oil, add the cheese and cook for 6-8 minutes, then serve immediately drizzled with the remaining glaze.
