Grapes, celery, apples and walnuts may sound like an odd filling for a sandwich, but they are essential components in a modern Waldorf salad, and they set beautifully in this delicious chicken salad wrap.
Cut the celery into a 1cm (just under ½") dice and toss them into a bowl.
Core the apple and then cut it into batons around 5mm (¼") in profile and toss them into acidulated water.
Cut the base from the lettuce, then finely shred the leaves and add them to the celery.
Cut the grapes into quarters, add them to the celery and lettuce, then toss the walnut halves and shredded chicken.
Mix all of the ingredients for the dressing, and taste as you go in order to get the salt at the right level.
Mix the sauce through the ingredients in the bowl, then drain the apples, dry them on kitchen paper and stir them through the wrap/sandwich filling.
Add a quarter of the salad to each tortilla and roll tightly. The best way to roll is to fold in the sides and then roll from the bottom up. Then, finally, wrap them in tinfoil, which will help hold the shape in your lunch box or picnic basket.
