Chicken Waldorf Salad Wraps

Chicken salad wraps that feature grapes, walnuts and apples in a mayonnaise dressing, the classic flavours associated with a Waldorf salad.

These delicious lunchbox or picnic wraps come together in around 15 minutes and require no cooking if you use leftover chicken!

Waldorf Salad Wraps

I’ve been on a bit of a sandwich-making spree on my website recently. Firm favourites like fish finger sandwiches, corned beef sarnies, chicken banh mi and sausage & fried egg butties all make an appearance!

These Waldorf-inspired chicken salad wraps have been part of my cooking repertoire for such a long time. The pictures have to be almost 10 years old and date back to the very early days of my site.

But I love the flavours in these wonderful wraps! Admittedly, if you are one of the many people who are distrustful of fruit in savoury dishes, these may be a step too far.

They feature flavours lifted straight from a classic Waldorf salad. Although I add a bit of chicken to give them a more “complete” lunchtime vibe and play with the sauce a little.

Red grapes, apples, walnuts and loads of celery and they are light but gloriously filling.

They are quick and easy too, you can get them knocked together in around 15 minutes.

Frequently Asked Questions

Can I make this in advance?

Yes, the flavours improve with time, although they are best eaten within 24 hours of being made up.

They are safe to eat up to 48 maybe even 72 hours, although things do get increasingly limp as time ticks by.

What’s the best part of chicken to use?

I usually use leftover roast chicken for this recipe and typically use whatever bits I have left. Something from the leg is best but go picking at the bones it will be fine!

Do I have to use a Granny Smith apple?

No, but I think that you should choose something from the “tart” end of the apple spectrum or your wrap can become very sweet.

Can I use different types of nut?

If you wish, pecan nuts are the obvious swap for walnuts, however, they are expensive! You can chuck in anything that you like.

Do I have to add the grapes?

No, but these are Waldorf salad wraps and grapes have become a common feature of that salad.

A left-field option that’s quite good fun and something that you may have in the storecupboard is replacing the grapes with soft golden raisins.

Serving Suggestions

These Waldorf-influenced chicken salad wraps are the perfect lunch box or picnic munch and that would really define how I serve them.

If they are packed in a lunch box, I would probably add a bag of crisps and maybe some fruit.

Now if I were planning a picnic then I would do a great deal more.

For certain some of my baked Scotch eggs would take up a little room in the basket and maybe even a couple of my pork and apple sausage rolls.

You can’t go too far wrong with a bit of pasta salad at a picnic either! A tuna pasta salad would be a real classic offering, but if you want to spice it up a little how about this sweet chilli pasta salad?

Chicken Waldorf Salad Wraps Recipe

Prep Time: 15 minutes

Grapes, celery, apples and walnuts may sound like and odd filling for a sandwich, but they are essential components in a modern Waldorf salad and they set beautifully in this delicious chicken salad wrap.

Ingredients

  • 200g (7oz) Cooked Shredded Chicken
  • 1 Stick (50-60g) of Celery
  • 100g (⅔ Cup) Red Seedless Grapes
  • 1 Granny Smiths Apple
  • 50g (½ Cup) Walnut Halves
  • 1 Baby Gem Lettuce
  • 4 (25cm or 10") Flour Tortilla
  • Lemon Juice (to Prevent the Apples from Browning)

For the Dressing:

  • 75g (⅓ Cup) Mayonnaise
  • 2 Tbsp Sour Cream
  • 1 Tbsp Wholegrain Mustard
  • 1 Tsp Cider Vinegar
  • ¼ Tsp Sugar
  • Salt to Taste

Instructions

  1. Cut the celery into a 1cm (just under ½") dice and toss them into a bowl.
  2. Core the apple and then cut it into batons around 5mm (¼") in profile and toss them into acidulated water.
  3. Cut the base from the lettuce then finely shred the leaves and add it to the celery.
  4. Cut the grapes into quarters, add them to the celery and lettuce, then toss the walnut halves and shredded chicken.
  5. Mix together all of the ingredients for the dressing, and taste as you go in order to get the salt at the right level.
  6. Mix the sauce through the ingredients in the bowl, then drain the apples, dry them on kitchen paper and stir them through the wrap/sandwich filling.
  7. Add a quarter of the salad to each tortilla and roll tightly. The best way to roll is to fold in the sides and then roll from the bottom up. Then finally, wrap them in tinfoil which will help hold the shape in your lunch box or picnic basket.
