Salmon is a wonderfully versatile fish; it's just as capable of standing up to big flavours as it is of being a standalone star; here it is marinated in a simple hoisin sauce glaze before being quickly cooked under a hot grill.
Zest the orange into a small bowl, and then add the remaining ingredients for the marinade and whisk to combine.
Add the salmon to the marinade and coat the fish evenly, then set it aside for 20-30 minutes.
About 10 minutes before you are ready to cook, heat your grill/broiler as high as it will go.
Place the salmon fillets, skin side down, on a foil-lined tray and cook under the grill (broiler) for 3-4 minutes.Then flip the salmon and return it to the grill for another 3-4 minutes, and rest for a minute or two before serving.
