My Perfect Cheese and Onion Sandwich Recipe

You can't beat a cheese and onion sandwich, and my version rocks grated mature cheddar with pickled onions, spring onion and red onion with mayo and Branston pickle served on a malted seeded bread.

Ingredients

4 Slices Malted Seeded Bread
30 g Butter Or Enough to Spread on the Bread
100 g Mature Cheddar Cheese 1 Cup
50 g Mayonnaise 3 tablespoon
40 g Small Chunk Branston Pickle 2 tablespoon
1 Spring Onion
1 Small Small Red Onion 50g
2-3 Pickled Onions 30g
¼ teaspoon Black Pepper

Instructions

Grate the cheddar cheese and add it to a bowl.
Add the mayonnaise and Branston pickle to the cheese and mix.
Finely shred the spring onion and toss it into the bowl.
Cut the red onion in half, peel it, then dice it as finely as you can and toss it into the bowl.
Finely chop the pickled onions, add them to the bowl with the black pepper and give everything a stir. Have a taste and add more pepper if you like!
Butter the bread and then divide the cheese filling between the sandwiches, cut and serve!
