Cheese and Onion Sandwich with Pickle

My perfect cheese and onion sandwich combines cheddar with a little mayonnaise & Branston pickle and 3 types of onion, spring, pickled & red.

Making this delicious butty is really easy and it will come together in around 10-15 minutes.

Cheese, Pickle and Onion Sarnie

Cheese and onion really is one of the finest flavour combinations, I love it!

Whether it is in my cheese and onion plate pie or my goats cheese and caramelised onion stuffed mushrooms, it just makes me excited!

Here it gets featured as part of a series of my favourite sandwich recipes. A series that features offerings as diverse as the classic egg and cress sandwich to a delicious fried spam sandwich!

My perfect cheese, pickle and onion sandwich features sharp cheddar cheese that gets held together with a combination of mayonnaise and Branston pickle.

Not only do they offer great flavour but they also hold the sarnie together. This means no picking parts of your sarnie out of your lap.

Branston has such a great affinity with cheddar cheese, it’s a combination that also features in my cheese and onion pasty recipe.

Then we get onion, I adore onion and here it features in 3 ways. I use sweet red onion, mild spring onion then some wonderfully sharp pickled onions.

Then all you have to do is slap it between some nutty malted bread and get stuck in!

Frequently Asked Questions

What sort of cheese should I use?

To be honest, there is only one type of cheese required for a cheese and onion butty, and that is the sharpest mature Cheddar that you can lay your hands on!

Lots of people are fond of adding Red Leicester but as far as I am concerned the flavour does not shine through. I suspect it is added for colour more than anything else!

Do I have to use brown/malted bread?

No, you can use anything you like. I just happen to think that the nutty malted flavours work best on a cheese and onion butty.

Can I use low-fat mayonnaise?

If that is important to you, yes, feel free to use anything you like.

If I have use for it in the couple days after making this sandwich I would recommend using homemade mayonnaise for the ultimate flavour.

Can I make this in advance?

The filling will sit in the fridge fine for a couple of days. However, the bread can become soggy if you leave the filling on for too long.

If you are planning on stuffing this in a lunchbox or taking it on a picnic, swap the bread for something a little more robust.

Serving Suggestions

My perfect cheese and onion sandwich is a lunchtime treat and I rarely go to great efforts to serve it with sides.

As I have in these pictures I usually share a bag of crisps (cheese and onion of course) with my wife. If you arrived here form a US-based search, that means chips!

Then I will add some extra pickled onions on the side and call me done till dinner time!

My Perfect Cheese and Onion Sandwich Recipe

You can't beat a cheese and onion sandwich and my version rocks grated mature cheddar with pickled onions, spring onion and red onion with mayo and Branston pickle served on a malted seeded bread.

Ingredients

  • 4 Slices Malted Seeded Bread
  • 30g (Or Enough to Spread on the Bread) Butter
  • 100g (1 Cup) Sharp Mature Cheddar Cheese
  • 50g (3 Tbsp) Mayonnaise
  • 40g (2 Tbsp) Small Chunk Branston Pickle
  • 1 Spring Onion
  • 50g (1 Small) Red Onion
  • 30g (2-3) Pickled Onions
  • ¼ Tsp Black Pepper

Instructions

  1. Grate the cheddar cheese and add it to a bowl.
  2. Add the mayonnaise and Branston pickle to the cheese and mix.
  3. Finely shred the spring onion and toss it into the bowl.
  4. Cut the red onion in half, peel it, then dice it as finely as you can and toss it into the bowl.
  5. Finely chop the pickled onions, add them to the bowl with the black pepper and give everything a stir. Have a taste and add more pepper if you like!
  6. Butter the bread and then divide the cheese filling between the sandwiches, cut and serve!
