Spam and Egg Sandwich Recipe
My slightly more grown-up take on a fried spam sandwich features some scrambled eggs with loads of spring onions and is finished with some spicy, sweet chilli sauce.

Ingredients
- 2 Small Baguettes Go for something with a crispy crust
- 3 Large Eggs
- Generous Pinch of Salt
- 1 Pinch White Pepper
- 35 g Butter 2 tablespoon
- 340 g Tin of Spam 12oz
- 5 Spring Onions
- 4 tablespoon Sweet Chilli Sauce
Instructions
- Slice the spring onions as finely as you can.
- Open the tin of spam and cut it into 6 slices.
- Crack the eggs into a bowl, add the salt and white pepper, then lightly beat them.
- Heat the smaller frying pan over a medium heat and the larger frying pan over a high heat.
- Add half of the butter to the smaller saucepan and when it melts, add the beaten eggs and cook, stirring with a rubber spatula for 3-5 minutes.
- Fry the spam in the larger frying pan and cook for 1-2 minutes on each side.
- Cut the baguettes in half lengthways, toast them under the grill, then spread them with the remaining butter.
- Just before you are ready to serve, add the spring onions to the scrambled eggs and mix them through the eggs.
- Place the scrambled egg on the bottom of each baguette, then add the fried spam and drizzle with the sweet chilli sauce.
