Spicy Spam and Egg Sarnie
The latest recipe in my recent series of sandwiches is born of a request, not from one of you guys… but my wife, and I certainly couldn’t refuse that.
So here we are a fried Spam and egg sandwich, and no it ain’t just some tinned pink meat, a bit of butter, a fried egg and loads of ketchup!
It is however delicious and equally almost as simple to put together.
Rather than a fried egg, this recipe runs with a super simple scrambled egg base. Scrambled egg that is livened up with loads of spring onions and white pepper.
Naturally fried Spam is the star of the sandwich, but rather than the obvious ketchup, I use Thai sweet chilli sauce on this butty!
For the longest time, it has been the condiment of choice for us on a bacon sandwich. We both love a bit of spice and sweetness works really well with salty meats, which makes it the perfect condiment for Spam as far as I am concerned.

Why don’t you add milk or cream to your scrambled eggs?
When I make scrambled eggs for breakfast I prefer really creamy soft eggs, but from a practical point of view, they don’t work on a sandwich. When I say that, I mean that they end up in your lap, not in your belly!
As a result, a firmer scrambled egg closer to an omelette (but broken up) works much better.
What sort of bread can I use?
Here I have used some crispy batons or baguettes that have a fairly open texture similar to ciabatta, but any sort of crispy roll or baguette would work well.
I would avoid sliced bread unless you are going for a very thick doorstep because it can get soggy.
Even then you need to ensure that you toast the bread really well.
Do I have to use sweet chilli sauce?
No, but I would urge you to give it a try at least once, it works so well!
Alternatives that work equally well are Sriracha sauce, and you can go as hot as you dare. Naturally, ketchup and brown sauce are both solid options and are properly retro.
Serving Suggestions
This spicy Spam and scrambled egg sandwich is a hearty old affair and it is more than capable of standing on its own.
If I were to serve it with anything it would likely be some air fryer cooked French fries or some air fryer chips.
Sweet potato fries offer a lovely sweetness which mirrors that of the sweet chilli sauce if you fancy something a little different.
I’m much more likely to add a bowl of crisps on the side if I were honest!

- Hob/Stovetop.
- Grill.
- 30cm or 12″ frying pan (Nonstick).
- 24cm or 10″ frying pan (Nonstick).
- Medium mixing bowl and a fork.
- Stirring spoon and a spatula.
- Chopping board.
- Kitchen knife.
- Butter knife.
- Weighing scales and measuring spoons. These are not really necessary unless you are aiming to replicate my calorific calculations.
Spam and Egg Sandwich Recipe
My slightly more grown-up take on a fried spam sandwich features some scrambled eggs with loads of spring onions and is finished with some spicy sweet chilli sauce.
Ingredients
- 2 Small Crusty Baguettes or Batons
- 3 Eggs
- Generous Pinch of Salt
- Pinch of White Pepper
- 35g (2 Tbsp) Butter
- 340g (12oz) Tin of Spam
- 5 Spring Onions
- 4 Tbsp Sweet Chilli Sauce
Instructions
- Slice the spring onions as finely as you can.
- Open the tin of spam and cut it into 6 slices.
- Crack the eggs into a bowl, add the salt and white pepper, then lightly beat them.
- Heat the smaller frying pan over a medium heat and the larger frying pan over a high heat.
- Add half of the butter to the smaller saucepan and when it melts, add the beaten eggs and cook stirring with a rubber spatula for 3-5 minutes.
- Fry the spam in the larger frying pan and cook for 1-2 minutes on each side.
- Cut the baguettes in half lengthways, toast them under the grill, then spread them with the remaining butter.
- Just before you are ready to serve add the spring onions to the scrambled egg and mix them through the eggs.
- Place the scrambled egg on the bottom of each baguette, then add the fried spam and drizzle with the sweet chilli sauce.
