Balsamic Mushroom Pasta

Mushrooms lend themselves so well to pasta dishes and this balsamic mushroom pasta is enriched with butter and Balsamic vinegar.

Few flavours go together like balsamic and mushrooms so this super simple mushroom pasta is a pretty safe bet on the flavour front, but it is just fantastic. It does not matter what is happening or how the day has gone it is one of those dishes that requires the cooking skill of a house brick to pull together and always tastes like a million dollars despite costing pennies.

Spinach Mushroom and Walnut Risotto

There is just something about risotto that is comforting, this spinach, mushroom and walnut risotto plays with autumnal flavours for the win!

’ve waxed lyrical about risotto here a few times so I will avoid the same old ode to the joys of cooking a proper risotto when talking about this Spinach, Mushroom and Walnut Risotto… Well maybe I will just reinforce that it is pretty much the law that you must sup wine whilst stirring a risotto, so there!

Ribollita

If I want hearty tasty peasant food I rarely look further than Italy and this Ribollita is the most magical bean and tomato soup that makes great use of bread.

The Italians just seem to own frugal, hearty, magical peasant food and this Ribollita is just another example of that, whether it is risotto or pasta, great Italian food is often cheap as chips to make and packs such an incredible punch of flavour.

Tomato Risotto

Tomatoes are a main stay of Italian food but a tomato risotto remains something of an unusual dish but a real favourite of mine!

So it’s September, how the feck did that happen? But hey at least it means time for a shifting style of food and a perfect excuse to break out a favorite risotto recipe, a tomato risotto! A bit of an unusual recipe and one my lovely wife has been cooking for years!
